What I Eat in a Day – Homemade and Vegan

Since starting to adopt a plant-based diet, I have found myself struggling with ideas of what to eat. You never realise how many items of food contain egg or whey powder until you try to cut them out of your diet! Therefore I decided to do a ‘What I Eat in a Day’ blog post in case anyone else has a similar problem or is considering adopting a plant-based diet. Please feel free to comment meal ideas below because I am always looking for new recipes to try.

Disclaimer: I am not a trained Nutritionist. I am still learning about Nutrition and am aware that this meal plan does not provide all the necessary nutrients that I require as part of a balanced healthy diet.

Breakfast:

For Breakfast, I normally have a homemade strawberry and banana smoothie where I blend a medium-sized banana and 7 medium-sized strawberries with soya milk and 2 teaspoons of chia seeds. I also have a bowl of Tesco’s Super Berry Granola with plain soya yogurt and golden syrup to sweeten. The Super Berry Granola consists of oat clusters with pumpkin seeds and freeze dried blackcurrants, blueberries and cranberries.

At 11am I normally have a cup of coffee – I take mine with a splash of soya milk and a pump of vanilla syrup – and a snack. Recently I have been having the Smokehouse BBQ Crunch Graze which is made up of smoky BBQ peas, chilli corn and crunch corn chips.

Lunch:

For Lunch, I have been loving having soup at the moment because of the cold weather. I am fortunate enough that my University has a microwave so I can heat the soup up during my lunch break. I normally make the soup myself. I mix a can of chopped tomatoes and 250ml of vegetable stock in a saucepan and bring it to the boil. I then add the kidney beans and vegetables – I use the Tesco Mixed Vegetables which contains carrots, garden peas, cauliflower and broccoli – and let it simmer for 5-10 minutes until everything has cooked. I serve it warm with pitta bread.

Dinner:

For Dinner, I have been having roasted potatoes and vegetables. I always meal-prep this meal at the weekend because it takes a while to prepare. I wash and peel the jacket potatoes and then chop them into small cubes. I boil some water in a saucepan and add the potatoes before letting it simmer for 15 minutes until the potatoes are soft. I then drain the potatoes and place them on a baking tray with the vegetables, drizzle with oil and add seasoning – I use raw peppers and onions for vegetables and pepper and garlic for seasoning. Bake for 30-40 minutes until roasted and enjoy.

  1. Ah I admire you for making smoothies for breakfast, that is literally my goals but I never manage to have the time to do something like that ugh, I am always in a rush in the mornings!! Gonna make a smoothie for myself now though haha! I love your blog can’t believe I found it only now!! xx
